Is anyone here a vegan?

    I want to eat vegan for the next two weeks starting on Wednesday. I need to do some serious meal prep though otherwise this is stupid and I will just do it when I get back from Texas.

    Does anyone have any good recipes they can share? What do you eat for breakfast?

    I’m not vegan, but brad and I don’t really like ground beef, so we substitute yves veggie ground round and it’s actually really good! I usually hate fake meat but we’ve used it in pasta sauce, tacos and chili and it’s delish

    I already don't eat beef! Maybe I will just be a vegetarian for a while because I have 0 idea what I would eat for breakfast.

    Like vegan + eggs? lol

    I'm not "officially" vegan but my diet is 95% plant based.

    For a quick breakfast, I generally have a chocolate protein smoothie:
    • 1 scoop chocolate Clean Vegan protein powder (30 grams of protein!)
    • 1 heaping tablespoon of cacao powder
    • Half a tablespoon of cashew butter (Almond butter also works but I find peanut butter is too oily)
    • Half a banana
    • A few raw cashews
    • 1 cup almond milk
    • 1.5 cups water
    Blend it and let it refrigerate overnight (or, if you want it immediately, you can add ice before blending).

    For a nice breakfast I generally make an acai berry bowl, which can be fun because you can change the toppings to whatever you want (blackberries, banana and granola are my fave).

    If you want something cooked, SOL breakfast patties are pretty good!

    Ah. I couldn't imagine having to change my whole diet like that.

    I don't personally have any vegan recipes but I am in a couple healthy cooking/eating subreddits and there's usually many vegas recipes. I'll grab a few interesting recipes.

    My motherin law makes mapo tofu with the yves ground "meat" and it is so good. Also vegan! There are lots of recipes when I google, I'm not sure exactly what she does but I highly recommend trying.

    @.D. I don't do a lot of vegan cooking because I feel like I'm substituting too many things, but I have tons of vegetarian recipes that could be altered to be vegan if you want to put a little more work into them.
    One of my favourites is making my own version of veggie ground round for taco's, spaghetti sauce, chili, stuffed peppers, sloppy joes etc using stewed lentils, quinoa or couscous (plus veggies and spice mix) I usually make two crock pots full and freeze half :drool:
    I also love using spaghetti squash as "noodles" and whipped butternut squash and yams as "cheese sauce" because I don't like f*cking around with non dairy cheese or nutritional yeast

    You could just eat raw vegetables all day. :) I mean, it is only for two weeks, right? :)

    Doyou make your own zucchini noodles or can you buy them?!
    Last week I made "spaghetti" with spaghetti squash. It was delicious but even half the squash was way too much for me.

    I was vegan for nine months. I felt hungry all the time and got too skinny. I tried to follow proper health guidelines for what to eat and stuff. HARD.
